For burgers I use 1lb beef fat with 4 lbs venison grind together 2 times adding desired seasoning on 2nd time through.

I fished 2 lakes in Sullivan County yesterday and measured about 4" on each.  With a warm up coming, I suggest bringing
the spud bar.

I buy a 8lb pork tenderloin and mix 1 to 4 ratio.  Kind of lean for some people but when you start adding pork butt it gets fatty.

Italon sausage about 2 to 1 one being sausage it ads all the seasoning and fat you need

Beef for burger, pork fat for sausage.  I like 25% as most renders off while cooking anyways but makes nice juicy burgers.  (BBQ)
